Already in July and August our blackberries finally came into season. I made a lot of jams, jellies and desserts with fresh fruit. I also spent some time freezing some of my fruit so that I could use them this fall.

This recipe was given to me some years ago by a good friend of mine. You can use fresh berries or frozen blackberry to make this deliciously moist cake.

Tip: If you do not have buttermilk on hand, you can try this tip to make your cheater own replacement. Fill a measuring cup with milk so that it is just shy of 1 cup line. Add in 1 tablespoon of lemon juice and let stand for about 5 minutes. Measure what you need for your recipe and discard the rest.

Blackberry Buttermilk Cake Recipe

1 cup blueberries (fresh or well drained frozen berries)
2 cups flour, divided
1 / 2 cup softened butter (not margarine)
1 cup granulated sugar
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon nutmeg
1 / 2 teaspoon salt
1 / 4 teaspoon cloves ground
1 / 4 teaspoon allspice
3 / 4 cup buttermilk

Toss blueberries with 2 tablespoons tablespoon of flour, set aside. In bowl, beat butter and granulated sugar together and then add the eggs. Beat the batter well. Combine baking soda, cinnamon, nutmeg, salt, cloves land, allspice and remaining flour. Add this mixture to the cream mixture alternately with buttermilk. Fold in berries.

Pour in a greased and floured baking 9 "square pan Bake. On a preheated oven 350 degrees for 45-50 minutes or until the cake is done. Cool on wire rack.

Serve with whipped cream, Vanilla Ice cream or a scoop of vanilla yogurt, if desired.
