Currently there is a solution for jailbreaking iPhone 3Gs with software 3.1. Attempting to use the current software solutions for the 3GS simply will not work and probably will force you to do a complete restore with iTunes. Also, if you have never previously jailbroken phone, you will unfortunately failed to downgrade the device to time jailbroken 3.0.
